Shrimp and Artichoke Strata
Ingredients
- 1 tablespoon olive oil
- 1 garlic clove, minced
- 1 small onion, chopped
- 1 red bell pepper, chopped
- 1 (14-ounce) can artichoke hearts, coarsely chopped
- 6 large eggs, lightly beaten
- 1/3 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 pound peeled and deveined cooked shrimp, coarsely chopped
- 1 1/2 cups soft bread cubes
- 1 (8-ounce) package cream cheese, cubed
- 1 cup (4 ounces) shredded Cheddar cheese
- 1/4 cup chopped fresh parsley
Preparation
- Heat oil in a large nonstick skillet over medium-high heat. Add garlic and next 3 ingredients; cook 3 minutes or until vegetables are tender.
- Combine eggs and next 3 ingredients in a large bowl. Stir in vegetable mixture, shrimp, and next 3 ingredients. Pour mixture into a greased 11- x 7-inch baking dish. Bake at 350º for 45 minutes or until golden brown. Let stand 5 minutes. Sprinkle with parsley.
