Ingredients
- 6 ounces cooked boneless, skinless chicken breast
- 1 red bell pepper (seeded and thinly sliced)
- 1 cup shredded carrots
- 1 cup shredded red cabbage
- 2 tablespoons chopped almonds
- 1/2 cup canned mandarin oranges, drained
- 1 tablespoon toasted sesame oil
- 1 tablespoon low-sodium soy sauce
- 1 tablespoon rice vinegar
Preparation
- Shred chicken into a bowl. Add bell pepper, carrots, cabbage, almonds and mandarin oranges. Drizzle with sesame oil, soy sauce and rice vinegar. Toss to coat.
