1/2 teaspoon sugar
3/8 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
12 mint leaves, torn
Shave beets very thinly with a chef's knife or mandoline; toss with walnut oil, sugar, salt, pepper, and mint leaves.
