Shallot Vinaigrette

Yield Makes 1 cup


  • 1/3 cup balsamic vinegar
  • 1 tablespoon minced shallot
  • 1 teaspoon chopped capers
  • 1 teaspoon Dijon mustard
  • 2/3 cup olive oil
  • Salt
  • Freshly ground black pepper

How to Make It

  1. Combine first 4 ingredients in a food processor; process until smooth. With processor running, gradually add oil in a slow, steady stream. Season to taste with salt and pepper.
