Shallot Vinaigrette

Ingredients

1/3 cup balsamic vinegar
1 tablespoon minced shallot
1 teaspoon chopped capers
1 teaspoon Dijon mustard
2/3 cup olive oil
Salt
Freshly ground black pepper

Preparation

Combine first 4 ingredients in a food processor; process until smooth. With processor running, gradually add oil in a slow, steady stream. Season to taste with salt and pepper.
