Ingredients

1/2 cup red wine vinegar
1 tablespoon Dijon mustard
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 cup olive oil
1 1/2 tablespoons minced shallots

Preparation

1. Combine first 4 ingredients in a small bowl, stirring with a whisk. Gradually add oil, stirring constantly with a whisk; stir in shallots.
