Shakertown Meat Loaf

  • 1 1/2 pounds ground chuck
  • 1/2 cup finely chopped onion
  • 2 tablespoons diced celery
  • 2 tablespoons diced green pepper
  • 1 egg, beaten
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup tomato juice
  • 3/4 cup quick-cooking oats, uncooked

How to Make It

  1. Combine meat, onion, celery, green pepper, egg, salt, and pepper in a large mixing bowl; mix well. Add tomato juice and oats, mixing well.

  2. Shape meat mixture into a loaf; place on aluminum foil on a broiler rack. Bake at 350° for 1 hour.
