Seven-Minute Frosting

Yield 3 1/2 cups

Ingredients

  • 1 1/2 cups sugar
  • 1/4 cup plus 2 tablespoons water
  • 1 tablespoon light corn syrup
  • Dash of salt
  • 2 egg whites
  • 1 teaspoon vanilla extract

How to Make It

  1. Combine first 5 ingredients in top of a double boiler; beat at low speed 30 seconds or until blended.

  2. Place over boiling water; beat at high speed 7 minutes or until stiff peaks form. Remove from heat; add vanilla and beat 1 to 2 minutes or until frosting is thick enough to spread. Spread immediately on cooled cake.
