This is one of my go-to meals. I use frozen boneless, skinless breasts and pound the chicken after defrosting in the microwave so it cooks evenly. It is good with or without the jalepeno. Pairs well with steamed broccoli or asparagus and a small side of pasta, orzo, quinoa or wheatberries.

Easy & delicious. I made my own blackened seasoning from another recipe on this site, Cooking Light's "Spicy Seasoning" (which I've used in many recipes - it's fantastic). Served with a simple side salad. YUM!
