    This risotto was very good and flavorful! In agreement with previous comments, the cook time was way off. 40-45 minutes was a more accurate cook time. Next time i may add a bit of garlic in with the shallots. Served with a chilled Albarino and salad. Yum!!

    Although I had to make some alterations to the recipe due to the fact that I didn't have on hand certain ingredients, I think this is a really good recipe. Loved the addition of lemon juice... gives it a great bite. Easy to make and delicious till the end. Enjoy!

    This turned out to be excellent. It's definately a dish worth serving for a special occasion. I did not have safron, and the dish turned out to be fine with out it. I also used half and half instead of heavy cream. I did not use tomatoes or parsley. I think it's true what a previous cook mentioned in that the cooking time for the rice is more than 18 minutes, but it's well worth it. Try serving this with fresh french bread, a salad, and grilled asparagus by candlelight to impress your sweetheart!

    Very delicious! I doubled the recipe which meant the risotto took longer but it was well worth it. I agree with other reviewers - it takes a good bit longer than 18 minutes to cook the risotto. I added some diced yellow squash and asparagus. Didn't use the tomatoes as no one in my family likes them except me. Also did not use the cream as we didn't have any. I will definitely make this one again!!

    This recipe was outstanding. The only change I made was to use an equal portion of shrimp in place of the scallops and it turned out perfectly. Both my husband and I found it to be excellent and will definitely be making it again.

    This was fantastic. We followed the recipe to the "T" with the exception of using lime instead of lemon. I agree, cooking time took a little longer, but it was definitely worth it. I was so sad when I was done eating! The clam juice I used was extremely low in sodium, and added a great delicious flavor. I will make this again, that's for sure!

    Very good and I will definitely make again - nice romantic dinner dish. Watch the broth amount - you may not need the entire amount. Added cream is not only unnecessary calories, it is wrong, wrong, wrong in risotto. But you knew that.

    Excellent! I used regular clam juice and didn't find it too salty at all. Forgot to add the cream the first time and added some shredded parmesan cheese on top at the end. Looking forward to making this again soon!

    I was nervous about making risotto; I'd never done it before. This recipe took longer than indicated, but was worth the time and effort. It turned out beautifully! I doubled the recipe with no problems. I also used half and half in place of the cream and it was fine. I think the cream did add just a touch of extra creaminess and wouldn't leave it out. Served with bruscetta. My whole family loved it! We will definitely make this again.

    This was great comfort food on a rainy night. I forgot the clam juice, so simmered the shrimp shells in chicken broth, and that worked alright. I also forgot the cream but I thought it still tasted great, sort of like a quicker paella(even though it took about an hour). A tad time consuming, but not difficult. Will certainly make again.

    Wonderful! Made exactly as per recipe. Served w/steamed asparagus. Definitely would work for special occasions.

    My first time making risotto and it came out amazing! It tasted so cheesy and not one oz of cheese in it. The saffron was REALLY expensive but worth it, it really does add great flavor and gives the dish a nice golden coloring, makes a difference. I used a little bit more seafood, went with 5oz instead and I added steamed asparagus. DELISH!

    Outstanding--as good as any risotto you would get a a fancy restaurant. I skipped the heavy cream--was so rich and creamy, I didn't find it necessary. Tastes just as good reheated the next day. One of my new favorite recipes.

    I love this recipe for risotto. It is so easy to make and although it takes some time (more than the 18 minutes the recipe called for), it is so worth it! I didn't have heavy cream, so I substituted half and half and it seemed to be fine. My husband loves it, too, so this is my go to recipe for seafood risotto.

    Amazing! This is one of my new favorite dishes. Great comfort food. I have to agree with most reviewers and say that it did take longer then 18 mins, but worth it. I may add crab meat next time too.

    this is amazing and easy to make. Made it without saffron and used milk instead of whipping cream still delicious! Its my boyfriends favorite dish!

    Made this for Valentine's Day dinner with my family. It is very easy and so full of flavor! Everyone loved it.
