Seafood Brine


Note that kosher salt is called for in the brine. If using ordinary sea salt, reduce the amount to 1/4 cup.


Makes about 1 quart

1/3 cup kosher salt
1/3 cup light brown sugar
1 quart cold water


Combine all ingredients in a large, non-reactive bowl, stirring until salt and sugar dissolve.
