Seafood Brine

Yield Makes about 1 quart
Note that kosher salt is called for in the brine. If using ordinary sea salt, reduce the amount to 1/4 cup.

Ingredients

  • 1/3 cup kosher salt
  • 1/3 cup light brown sugar
  • 1 quart cold water

How to Make It

  1. Combine all ingredients in a large, non-reactive bowl, stirring until salt and sugar dissolve.
