Yield enough for one (8-inch) 3-layer cake


  • 1 1/2 cups firmly packed brown sugar
  • 2 egg whites
  • 1/2 cup water
  • 1/2 teaspoon salt
  • 1 teaspoon almond extract

How to Make It

  1. Combine sugar, egg whites (at room temperature), water, and salt in top of double boiler; place over boiling water, and stir constantly until sugar dissolves. Beat on high speed of electric mixer for 7 minutes or until frosting is fluffy and holds soft peaks. Remove from heat; stir in flavoring.
