1 tablespoon olive oil
1 pound large shrimp, peeled and deveined
1 1/2 tablespoons dried red pepper flakes
2 garlic cloves, minced
2 cups diced tomatoes
2 tablespoons chopped fresh flat-leaf parsley
1 teaspoon paprika
1/4 teaspoon salt
1 (14-ounce) can quartered artichoke hearts, drained
How to Make It
Heat oil in a large nonstick skillet over medium-high heat. Add shrimp, pepper flakes, and garlic; sauté 3 minutes. Add remaining ingredients; cook 3 minutes, stirring frequently, or until shrimp are done and mixture is thoroughly heated.
This is a great dish, too bad there is a misprint in the recipe. It calls for 1-1/2 tablespoons of red pepper flakes. The actual recipe calls for 1-1/2 TEASPOONS. I don't care for red pepper too much, I put in about 1/4 to 1/2 teaspoon. If you adjust this ingredient to your liking, this is a very tasty and easy recipe.
I agree with the other review that this has TOO MUCH red pepper flakes. Not sure if a misprint, but with 1 1.2 Tablespoons it is so overpowering you can't taste anything else! I would make this again, but put in 1 teaspoon and I added more garlic and artichoke bottoms instead of hearts.
