    I used boneless-skinless thighs and a layer of peanut oil in a deep stainless steel pan. I turned the thighs a few times to brown them on every surface. I halved the cayenne since my kids were eating, too, and only my husband added the hot sauce. Sprinkling the chicken with extra salt and drying on a rack over paper towels assured the outside was flavorful and crunchy. I thought it was really great, especially for the first time I have braved frying chicken!

    really easy way to make a fried chicken. i chopped up three boneless breasts into little bites then breaded and cooked per the recipe. perfect for watching a certain popular football game that's on TV tonight. breading ran short, similar to other reviews, so i would make 2x the breading next time.

    This recipe blew my mind. My husband said after his first bite that he wanted me to cook this once a week. I used a hot sauce that is a bit smoky and it was delicious. I also think that using a cast iron skillet helped this dish. I wouldn't use any other pan.

    WOW!!! Easy, delicious, and low in calories--perfect combo. Made it exactly as written. Will make again. Served it with the creamed corn recipe which is in the same issue--great dinner.

    Great take on "fried" chicken. I put the dry ingredients in a ziplock bag and shook the chicken in it to save on dishes. Served this tonight with a corn and black bean salad. Perfect summer dinner.

    I cooked the chicken in our cast iron skillet and they came out crispy on the outside and tender on the inside. The flavor was delicious and it went so well with our favorite hot sauce. It was very quick to put prep and cook, which makes it a great meal for a night you do not have a whole lot of time to cook with.

    Very tasty. My husband really, really liked it. He said it was a keeper. Very easy to do and I had all the ingredients in the pantry, which made it even better. My chicken didn't look like the pic but it was very good anyway.

    Wow! I normally don't even like chicken thighs but this recipe was amazing! I did find that the egg and breading was a little short (only could make 6 thighs - maybe ours were just larger?). Served with the recommended stewed collards green and creamed corn. We will definitely make this again.
