Savory Ham-Veal Ring

  • 1 pound ground, cooked ham
  • 1 pound ground veal
  • 2 cups soft breadcrumbs
  • 3/4 cup applesauce
  • 1/2 cup catsup
  • 1/2 cup finely chopped onion
  • 2 eggs, beaten
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon pepper
  • 1/2 cup apple jelly
  • 2 tablespoons catsup
  • Cooked Mustard Sauce


  1. Combine first 9 ingredients; mix well. Press mixture into a lightly greased 6 1/2-cup ovenproof ring mold. Bake, uncovered, at 325° for 1 1/2 hours. Invert mold onto a shallow baking pan, and turn meat ring out.
  2. Combine apple jelly and 2 tablespoons catsup in a small saucepan. Cook mixture over medium heat until jelly melts. Pour half of jelly mixture over meat ring, and bake an additional 30 minutes.
  3. Transfer meat ring onto a serving platter. Spoon remaining sauce over ring. Serve with Cooked Mustard Sauce.
