Savory Ham-Veal Ring

Ingredients

1 pound ground, cooked ham
1 pound ground veal
2 cups soft breadcrumbs
3/4 cup applesauce
1/2 cup catsup
1/2 cup finely chopped onion
2 eggs, beaten
1 teaspoon Worcestershire sauce
1/2 teaspoon pepper
1/2 cup apple jelly
2 tablespoons catsup

Preparation

Combine first 9 ingredients; mix well. Press mixture into a lightly greased 6 1/2-cup ovenproof ring mold. Bake, uncovered, at 325° for 1 1/2 hours. Invert mold onto a shallow baking pan, and turn meat ring out.

Combine apple jelly and 2 tablespoons catsup in a small saucepan. Cook mixture over medium heat until jelly melts. Pour half of jelly mixture over meat ring, and bake an additional 30 minutes.

Transfer meat ring onto a serving platter. Spoon remaining sauce over ring. Serve with Cooked Mustard Sauce.
