I make this almost monthly and then freeze it in breakfast size portions. It's great for a special occasion brunch or just to have during the week. I usually bulk up the greens but other than that I stay true to the recipe. Quite delicious - it's a staple in my household.

I made the recipe because I could not find escarole and it was wonderful. I used roasted garlic bread from Whole Foods and just omitted the fresh garlic. I made it for a crew of construction workers working in my home and even the most skeptical guy loved it and said it was very filling. It even reheated well in the microwave, on reduced power. The next time I make it Im going to make a half recipe because a 9x13 pan is way too much for one person.
