This high flavor side dish of Sautéed Broccoli Rabe is packed with potassium, iron, and calcium, fiber as well as vitamins A, C, and K. Broccoli rabe is one of the most nutritious leafy greens to add to your diet.

Ingredients

1 pound broccoli rabe, trimmed
1 1/2 teaspoons olive oil
1 tablespoon red wine vinegar
1/4 teaspoon kosher salt

Preparation

Cook broccoli rabe in boiling water 3 minutes or until crisp-tender. Remove from pan; rinse with cold water. Drain. Set aside until ready to serve. Heat olive oil in a skillet over medium-high heat. Add broccoli rabe; sauté 2 minutes. Drizzle with vinegar, and sprinkle with salt.
