Sautéed Halibut with Gazpacho Salsa

To accompany the fish and salsa, toss fresh salad greens with a mixture of salt, pepper, oil, and vinegar (to taste).

Ingredients

  • 2 (8-ounce) fillets of Alaskan halibut or any fresh fish available
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon olive oil
  • 2 cups salad greens or mixed lettuces
  • Gazpacho Salsa

Preparation

  1. 1. Sprinkle fish with salt and pepper. Heat oil in a large skillet over medium-high heat. Add fish; cook 3 minutes on each side or until fish flakes easily with a fork.
  2. 2. Place 1 cup salad greens (prepared as described above) on each plate. Serve with Gazpacho Salsa topped with fish.
