- 2 (8-ounce) fillets of Alaskan halibut or any fresh fish available
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon olive oil
- 2 cups salad greens or mixed lettuces
- Gazpacho Salsa
How to Make It
Sprinkle fish with salt and pepper. Heat oil in a large skillet over medium-high heat. Add fish; cook 3 minutes on each side or until fish flakes easily with a fork.
Place 1 cup salad greens (prepared as described above) on each plate. Serve with Gazpacho Salsa topped with fish.
