Sautéed Arctic Char and Arugula Salad with Tomato Vinaigrette

    Great, and easy to make. Even my kids who don't like fish loved it. I made it with Mahi Mahi since I had it, and served it over spinach leaves and it was great.

    This was excellent and easy. I grilled salmon instead of sauteing, but followed the rest of the recipe.

    This is a fantastic recipe! My husband doesn't like grape tomatoes so I just used regular tomatoes and he loved it! Th textures and flavors all blend together perfectly! I would definitely serve this to company!

    I make this recipe probably 6-10 times a year. Of fish recipe not grilled, this is by far my favorite (although it's great grilled, too). I've only made it once with Arctic Char, because it's rarely available around me, but any mild whitefish is good. Just had it tonight with tilapia. Scrumptious! The recipe suggests Alaskan salmon if char isn't available, but I don't recommend it. Salmon is too strong and it unbalances the flavors.

    I can't believe I've waited so long to give this a try. I've had a hard time finding Arctic char in my area, but I finally did so gave it a go this evening. Not only was it delicious (especially for being so deceptively simple), but I agree it would work well with many different types of fish. The pine nuts and the tomato dressing really make a simple, healthy dish stand out. I'll be putting this in the regular rotation.
