Ingredients
- 2 clove(s) garlic, minced
- 0.33 cup(s) grated parmesan
- 16 large white mushrooms
- 2.5 tablespoon(s) marsala wine or sherry
- 5 ounce(s) mascarpone cheese
- 2.5 tablespoon(s) minced flat-leaf parsley
- 5 tablespoon(s) olive oil
- 0.66 cup(s) panko
- 0.5 teaspoon(s) pepper
- 1 teaspoon(s) salt
- 0.75 pound(s) sausage
- 6 scallions, white and green parts finely chopped
Preparation
- 1. heat oven to 325
- 2. separate mushroom caps and stems; put caps in a bowl with 3 tbsp oil and marsala/sherry and set aside
- 3. cook sausage over medium heat until browned
- 4. add chopped mushroom stems and cook 2-3 min
- 5. add scallions, garlic, salt, pepper and cook 2-3 min
- 6. stir in panko and mascarpone until creamy; remove from heat
- 7. add parmesan and parsley; season to taste
- 8. place mushroom caps in shallow baking dish; fill with sausage mixture; bake 45 min
