Trim fat from steak. Combine steak and next 6 ingredients (steak through hot sauce) in a large zip-top plastic bag. Seal bag; marinate in refrigerator 8 hours, turning bag occasionally. Remove steak from bag, reserving marinade.
Prepare grill or broiler. Place steak on grill rack or broiler pan coated with cooking spray; grill or broil 8 minutes on each side or until desired degree of doneness. Slice steak diagonally across grain into thin strips. Set aside; keep warm.
Pour reserved marinade through a sieve into a small microwave-safe bowl; cover with plastic wrap. Microwave at high 5 minutes or until marinade boils. Divide steak evenly among bottom halves of buns; top each with 2 tablespoons marinade and top half of bun. Garnish with olives, if desired.
