Sauce Rochambeau

Yield about 2 1/2 cups

Ingredients

  • 1/2 cup butter or margarine
  • 1/2 cup all-purpose flour
  • 2 cups whipping cream
  • 2 cups (8 ounces) shredded Cheddar cheese
  • 1/2 cup sherry
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper

How to Make It

  1. Melt butter in a heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add cream; cook over medium heat, stirring constantly, until thickened and bubbly. Add cheese, stirring until cheese melts. Stir in remaining ingredients; cook over medium heat until thickened.
