Easy side: Boil 2 lb. peeled and chopped potatoes until tender; drain and mash. Stir in 1 cup warm milk, 3 oz. softened cream cheese, 1 Tbsp. chopped fresh chives, 1/2 tsp. salt, and 1/4 tsp. pepper. Serve immediately.

How to Make It

Step 1

Preheat oven to 375°. Sprinkle salmon with salt.

Step 2

Place salmon on a lightly greased aluminum foil-lined 15- x 10-inch jelly-roll pan; pour lime juice and olive oil over salmon.

Step 3

Stir together breadcrumbs and next 3 ingredients; spread over salmon.

Step 4

Bake at 375° for 20 minutes or just to desired degree of doneness. Serve immediately.
