Four medium limes should yield enough juice for this recipe.
1 cup chopped seeded cucumber
3 tablespoons finely chopped red onion
1 medium jalapeño, seeded and finely chopped
3 tablespoons chopped fresh mint
3 tablespoons fresh lime juice
1 tablespoon sugar
1/8 teaspoon salt
4 (6-ounce) salmon fillets
2 tablespoons fresh lime juice
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
How to Make It
Combine first 7 ingredients in a small bowl. Cover and chill.
Place fillets on rack of a broiler pan coated with cooking spray. Drizzle with 2 tablespoons lime juice; sprinkle with 1/2 teaspoon salt and pepper. Broil 12 minutes or until fish flakes easily when tested with a fork. Serve salmon with cucumber mixture.
