Great lunch recipe for weekday meals as the berries will help keep you powered for the afternoon at work and there is no need to reheat; the lemon preserves the apple so it browns slower and it's great super chilled (right from the fridge). Buy quick cooking wheat berries at the store (they will say "par boiled" on the bag) so you can skip the soak and the 1 hr cook time. My berries were ready in 15 minutes with a great chewy texture. Not many opportunities to use smoked salmon in everyday cooking, but I love the flavor so I'm incredibly happy to have this recipe in my "keeper" list. Enjoy!

Fabulous!! Great crunch, as promised, and even better flavors. Quinoa makes an easy sub for the wheat berries.
