In a bowl, combine salmon, pesto, mayonnaise, garlic, sun-dried tomatoes, olives, scallions and vinegar; mash with a fork. Add a little water to adjust texture, if necessary. Season with salt and pepper.
Spoon salmon salad into avocado halves, sprinkle with toasted pine nuts, if desired, and serve.

this was good. i sautéed frozen salmon, used a garden tomato and red onion. my avocados (2) were small so i peeled and quartered them then served the mix over. the pine nuts were good on top. nice, light meal. will make again.
Deeeeeeelicious! I modified it slightly, using baked salmon, fresh tomatoes, regular mayo with drizzle of olive oil, and making fresh basil pesto. The combination of all the ingredients is very delightful and it's quite easy to make. Perfect also for any gathering!
