Salmon over Spinach

Salmon baked on a bed of fresh spinach

Ingredients

  • 1/2 cup(s) Fresh spinach
  • 1 Salmon filet
  • Herbs de Provence
  • 2 slice(s) Fresh lemon
  • 2 tablespoon(s) Peanut oil

Preparation

Preheat oven to 375. Spray PAM on glass dish. Place fresh spinach on bottom of dish. Put salmon filet on spinach. Sprinkle with herbs de provence. Place two slices lemon on top of salmon. Drizzle peanut oil over whole thing and bake. (About 10 - 15')
