1 teaspoon lemon zest plus 2 1/2 Tbsp. fresh juice (from 2 lemons)
1/2 teaspoon black pepper
1 small garlic clove, minced
8 sourdough bread slices, toasted
8 butter lettuce leaves
12 tomato slices
1/2 teaspoon kosher salt
12 ounces smoked salmon belly (such as Boston Smoked Fish Co.'s Salmon Bacon)
How to Make It
Stir together mayonnaise, dill, lemon zest, lemon juice, pepper, and garlic in a small bowl. Spread 1 tablespoon of the mayonnaise mixture on 1 side of each sourdough slice. Top 4 of the bread slices evenly with lettuce, tomatoes, salt, and salmon. Cover with remaining 4 bread slices, and serve immediately.
