2 tablespoons chopped onion
1/3 cup basmati rice, uncooked
Dash of saffron
1 cup canned low-sodium chicken broth, undiluted
3 tablespoons no-salt-added tomato sauce
1/8 teaspoon salt
1/8 teaspoon pepper
1 tablespoon chopped fresh parsley
How to Make It
Coat a medium nonstick skillet with cooking spray; add oil. Place over medium-high heat until hot. Add onion; saute 3 minutes. Add rice and saffron; saute 2 minutes.
