Creamy and sweet, Rum-Raisin Rice Pudding is a comforting sweet ending to your meal, plus our version stirs up super quick.

2 cups unseasoned hot cooked long-grain white rice simmered in water
1/2 cup raisins
1/4 cup rum
2 (3.5-ounce) vanilla pudding snack cups
1/3 cup toasted sliced almonds
1/4 teaspoon ground cinnamon
Dash of ground nutmeg
Start with hot cooked rice simmered in water. Combine raisins and rum in a microwave-safe bowl. Microwave at HIGH 2 minutes; let stand 5 minutes. Stir raisin mixture, vanilla pudding, almonds, cinnamon, and nutmeg into rice.
