Ingredients

  • 1 1/4 cups pitted dark sweet cherries
  • 1 1/4 cups fresh pineapple chunks
  • 1 cup light coconut milk
  • 1/4 cup chopped peeled fresh beets
  • 1 tablespoon fresh lime juice (about 1 large lime)
  • 3 tablespoons honey
  • Unpeeled pineapple wedges (optional)

Preparation

  1. 1. Place all ingredients in a blender; process until smooth. Strain mixture through a sieve; discard solids. Pour into glasses. Garnish with pineapple wedges, if desired. Serve immediately.
