Ingredients

1 1/4 cups pitted dark sweet cherries
1 1/4 cups fresh pineapple chunks
1 cup light coconut milk
1/4 cup chopped peeled fresh beets
1 tablespoon fresh lime juice (about 1 large lime)
3 tablespoons honey
Unpeeled pineapple wedges (optional)

Preparation

1. Place all ingredients in a blender; process until smooth. Strain mixture through a sieve; discard solids. Pour into glasses. Garnish with pineapple wedges, if desired. Serve immediately.
