Royal Icing

Yield Makes 1 1/2 cups.
Look for meringue powder (dried egg whites) at large discount stores, or at wilton.com. You may need to prepare several batches of Royal Icing for the Gingerbread Lighthouse depending on how thick the “snow” is on the base and how much is used to “glue” candy pieces to gingerbread structure.

Ingredients

  • 2 cups powdered sugar
  • 1 1/2 tablespoons meringue powder
  • 3 tablespoons water
  • Paste food coloring

How to Make It

  1. Combine all ingredients in a mixing bowl. Beat at medium speed with an electric mixer until firm enough to pipe, but still of spreading consistency. Divide into bowls, and tint with food coloring. Cover bowls with a damp cloth to prevent a crust from forming while icing.
