my mustard turned out very hot, as in horseradish hot, borderline bitter. i tried it with bread and the taste mellowed, but i'd like to correct for the hot/bitter taste. any suggestions? i let the seed mixture sit covered for two days, three nights (sunset mag said to let it sit for two or three days). i'm wondering if it sat too long and got bitter?
