  • 1 small onion, chopped
  • 1 tablespoon olive oil
  • 1 clove garlic, chopped
  • 2 teaspoons chopped fresh rosemary or 1/2 tsp. dried rosemary leaves, crushed
  • 1/8 teaspoon ground black pepper
  • 4 medium all-purpose potatoes (about 2 lbs.), peeled, if desired, and cut into 1-inch chunks

How to Make It

  1. Preheat oven to 450°.

  2. Combine all ingredients except potatoes in large bowl. Add potatoes; toss to coat.

  3. Turn into 13 x 9-inch roasting pan. Roast, stirring occasionally, until potatoes are tender and golden, about 50 minutes.
