  • 3 tablespoons minced shallots
  • 1 tablespoon chopped fresh rosemary
  • 1 1/2 tablespoons crushed green peppercorns
  • 1/2 cup red wine vinegar
  • 1/8 teaspoon salt


  1. Combine minced shallots, chopped fresh rosemary, crushed green peppercorns, red wine vinegar, and salt, and chill the shallot mixture for 30 minutes. Serve with oysters.
