Fudge pops are a must-try during warm nights or when trying to find your inner child. Who doesn't have a great childhood memory involving the classic chocolate pop? Look for the plastic holders at specialty kitchen shops, or use 3-ounce paper cups and craft sticks.

Ingredients
- 1 (1.4-ounce) package sugar-free, fat-free chocolate instant pudding mix
- 1 cup fat-free milk
- 1 (12-ounce) can evaporated fat-free milk
- 3/4 cup miniature marshmallows
- 1/3 cup chopped sugar-free milk chocolate bar (2 ounces)
- 1/4 cup plus 3 tablespoons coarsely chopped unsalted, dry roasted peanuts, divided
Preparation
- 1. Combine pudding mix and sweetener in a large bowl. Gradually add fat-free milk and evaporated milk, stirring with a whisk until smooth. Stir in marshmallows, chocolate, and 1/4 cup peanuts.
- 2. Sprinkle 3 tablespoons peanuts evenly among 12 plastic holders. Pour pudding mixture into holders, and add sticks. Freeze 3 hours or until firm.
