How to Make It
Set ham on a rack in a 9- by 13-inch pan. Rub meat with olive oil, then season well with salt, pepper, and dried rubbed sage. Roast in a 350º oven until a thermometer inserted into center registers 150º to 155º, about 1 hour and 50 minutes. Let roast stand at least 20 minutes, then cut into slices.
