1 pound small zucchini
2 tablespoons olive oil
1 teaspoon jarred minced garlic
1 teaspoon dried Italian seasoning
1/2 teaspoon dried crushed red pepper
1/2 teaspoon salt
How to Make It
Preheat oven to 450°. Cut zucchini lengthwise into quarters; cut each piece in half crosswise. Toss zucchini with oil and remaining 4 ingredients; arrange zucchini in a single layer on a baking sheet. Bake 15 minutes or until golden brown and tender, turning once after 7 minutes.
A delicious, quick and easy side dish for weeknights! Excellent for when zucchini is plentiful. You probably have all the ingredients (except the zucchini) already in your kitchen. I used fresh garlic. You might want a little less crushed red pepper, especially if serving to children.
