Ingredients

  • 3 medium onions, cut into wedges
  • 6 small red potatoes, halved
  • 2 medium-size sweet potatoes, peeled and cut into 1/4-inch-thick slices
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

How to Make It

  1. Toss together all ingredients; place on an aluminum foil-lined baking sheet.

  2. Bake at 450° for 30 to 40 minutes or until onion and potatoes are tender.
