I made the recipe as written, but added a teaspoon or so of extra virgin olive oil in the end, because it seemed a bit dry. My husband and I both loved it and I will definitely serve it to my vegetarian relatives. Served with a tossed green salad and hot crusty rolls, yum.

Save some pasta water to loosen it up. Otherwise it's very good.
