Ingredients

  • 1 large sweet potato, peeled and cut into 1/2-inch cubes
  • 1 medium onion, cut into 1/2-inch wedges
  • 2 teaspoons extra-virgin olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • Cooking spray

Preparation

  1. Combine first 5 ingredients in a large bowl; toss well.
  2. Coat a nonstick baking sheet with cooking spray; add potato mixture, and arrange in a single layer.
  3. Bake at 400° for 20 to 25 minutes or until potato is tender, stirring once. Serve immediately.
