Roasted Sweet Potatoes, Onions and Brussels Sprouts

    I just made this. I had brussel sprouts to use up! If you don't like brussel sprouts roasting them won't change that! I didn't have pearl onions so used a regular big one cut up. I didn't use the herbs listed as they weren't to my taste. I did use coconut oil and sprinkled on seasoned salt, basil, pepper and curry. The temp and cooking time were spot on. The veggies were sweet and soft. We had had a slow cooker honey mustard spiral ham and slow cooker chai pear applesauce! Yummy dinner!
