    This is a wonderful soup. I made a couple of changes due to what I had on hand. Used 3 cups fresh beet stock that I had made from previous recipe combined with 2 cups chicken stock. It made the soup a beautiful orange/pink color. I also used roasted garlic for a deeper garlic flavor. It was delicious. I also misread the recipe and used only 6 squash, but it was fine. I would make the soup again. It is good for everyday as well as for guest.
