  • 8 ounce(s) cubed sweet potato
  • 2 carrots, thinly sliced
  • 2 parsnips, thinly sliced
  • 1 tablespoon(s) olive oil
  • 1/8 teaspoon(s) salt
  • 1/8 tablespoon(s) black pepper
  • 1 teaspoon(s) minced garlic
  • 1 teaspoon(s) honey


  1. Preheat oven to 450. Combine veggies in a bowl and add all seasonings, toss well to coat. Arrange vegetable mixture on a rack placed in a broiler pan. Bake for 30 minutes, stirring midway through. Makes 4 (3/4 cup) servings
