A sausage patty is much easier to make than you might think--you just need the right blend of flavors going into your ground meat of choice; here, we went with chicken. These quick and easy little patties are a great way to add something special to your weekend breakfast spread.
1 1/2 pounds ground chicken
1/2 cup finely chopped fresh spinach
1/2 cup finely chopped bottled roasted red bell peppers, rinsed and drained
2 teaspoons olive oil
1 teaspoon dried sage
3/4 teaspoon crushed red pepper
3/4 teaspoon kosher salt
1/2 teaspoon dried thyme
1/2 teaspoon ground coriander
How to Make It
Combine ground chicken, spinach, roasted red bell peppers, olive oil, sage, crushed red pepper, salt, thyme, and coriander; knead until well combined. Shape mixture into 16 (1/2-inch-thick) patties.
Cook patties in batches in a large nonstick skillet over medium heat 3 minutes; turn patties, and cook 3 minutes or until done.
Made these last night and they were a hit! I had everything but the coriander on hand. I made the patties slider size and served them on toasted slider buns with just a smear of mayo. These would be a great option at a bbq. I did use food prep gloves when mixing the ingredients into the raw chicken and shaping into patties. Will definitely make again!
