Roasted Red Pepper-Caesar Tortelloni

It's a very good recipe. I added two chicken breasts. I didn't use specified tortelloni. Instead I used one bag of spinach and ricotta tortelloni and one bag of three cheese tortelloni. I would also add a little more dressing if it sits awhile or if you have leftovers.

This recipe is worth a try. I wasn't able to find the asparagus and ricotta tortelloni, so used three cheese instead. It needs something to cut the richness if using cheese tortellini- perhaps romaine lettuce, spinach or fresh asparagus. I will probably cut the dressing in half next time.
