Roasted Pepper-Tomato Bruschetta
Seeding the tomatoes will enhance the appearance of these appetizers.
Yield: 2 dozen
- 1 (7-ounce) jar roasted red bell peppers, drained and chopped
- 6 ripe tomatoes, seeded and diced
- 3 tablespoons shredded Parmesan cheese
- 2 tablespoons chopped fresh basil
- 1 garlic clove, minced
- 1/2 teaspoon coarse-grained sea salt or kosher salt
- 1/4 teaspoon freshly ground pepper
- 24 French bread slices, toasted
- Combine first 7 ingredients; spoon 1 heaping tablespoon over each toasted bread slice.
