How to Make It

Step 1

Preheat oven to 350°F. Put the beet wedges in a roasting pan, drizzle with the olive oil and roast in the oven for 20 minutes, or until just tender.

Step 2

Meanwhile, whisk together the mint sauce and balsamic vinegar, and then season well with salt and freshly ground black pepper.

Step 3

Drizzle the mint sauce mixture over the roasted beet wedges, and scatter with the crumbled goat cheese. Return the pan to the oven for 5 minutes more. Sprinkle with the mint leaves.
